Carolyn (Spooner) Jackson is a diabetes specialist dietitian with more than 17 years of experience in both the NHS and private practice. Based in the UK, Carolyn is a registered dietitian and the creator of Spooner Nutrition.

When I was diagnosed with Type 2 diabetes on Christmas Eve (yes, how hard is that) I really felt like that was the end of my life as I knew it. I spent the Christmas break googling away, joining different groups and reading articles which put me in a total spin. Then I found Carolyn @ Spooner Nutrition! After our first conversation I felt much better. Carolyn helped me to understand my diabetes and how I could get a better perspective on what I could eat including the quantities. Carolyn helped me adjust my diet to manage sugar and carb intakes after being diagnosed with type 2 diabetes and a high bad cholesterol level. I booked phone sessions over about 6 weeks to review a food app diary that sent her reports of the food I was eating. She made recommendations for new foods I hadn’t previously tried or been keen on, which have now become part of my regular diet. Friendly, helpful and informative.

I got in touch with Carolyn when my GP said that my cholesterol was too high and wanted to put me on statins which I was reluctant to take. Through a very helpful an online meeting, follow up report and responses to supplemental questions I had Carolyn gave me comprehensive dietary advice & recommendations to reduce my cholesterol levels and dealt with all of my queries and concerns. I would highly recommend her services.

Carolyn is wonderful, I could not recommend her more. I found her 8 weeks after my daughter was born, I had gestational diabetes and my sugars were still quite high.  I was feeling stressed and overwhelmed at the thought of having to restrict my diet & manage diabetes (as it runs in my family) while trying to care for two young children. Carolyn was so calm and reassuring.  She helped me get a list of balanced simple meals (that suited my whole family) which I stuck on the fridge!  She also sent over a shopping list of must haves so I could get well stocked. Mostly what we were already eating, in slightly different proportions, so no huge changes.
