About Carolyn
Carolyn's love for food and science ignited long before she pursued a career as a dietitian. While still in high school, she delved into the culinary world by taking on a part-time role at a quaint restaurant in North Wales, where she assisted chefs with fundamental food preparation. Upon high school graduation, she transitioned into a full-time position as a commis chef, earning an NVQ in food preparation and catering as she honed her skills.
This experience laid a solid groundwork for mastering culinary essentials like crafting soup from scratch using a roux, developing rich meat stocks, and flawlessly frying eggs during bustling breakfast shifts. As her expertise grew, she advanced to a prestigious fine dining establishment in Cheshire, securing the role of senior chef de partie. Driven by a burgeoning passion for appetisers and desserts, she excelled in creating delectable dishes such as salmon gravlax, homemade chicken liver parfait, and the iconic French dessert, crème brulee.
While thriving in the culinary world, Carolyn realised her yearning for the scientific and health aspects of food. After six years in the culinary realm, she made the decision to retire her chef whites and focus entirely on pursuing a degree in nutrition and dietetics.
In 2008, Carolyn became a registered dietitian and embarked on a diverse career within the NHS. Her journey has encompassed roles in weight management, oral nutrition support, and her true passion and expertise in diabetes. She has had the privilege of collaborating with accomplished doctors, nurses, psychologists, and esteemed dietitians.
Currently, Carolyn serves as the Lead Primary Care Network Dietitian specialising in diabetes within the NHS, while also venturing into freelance and private practice in recent years. Continuing her education, she obtained Non-Medical Prescribing qualifications from Teesside University in 2020.
Her work gained recognition in 2022 and 2023 when it was featured in the medical journal Diabetes Medicine after being selected from abstract submissions at the Diabetes UK Professional Conference.
